This recipe is SOOO easy and SOOO tasty. It really takes no time to prepare (if you have a food processor) and the only time consuming thing is that you’ll have 3 skillets on the go with the different food prep items. You’ll end up varying the spices I’m sure to meet your own specific tastes. ENJOY!!!!
Ingredients:
- 1 large head cauliflower (riced)
- 1 large yellow onion (chopped)
- 2-3 garlic cloves (chopped)
- 1 lb shrimp (I opt for the stuff already deveined and tails off)
- 3 eggs
- Olive oil
- Spices (garlic powder, onion powder, paprika)
Directions:
1. Chop cauliflower in food processor to a rice/coucous like consistency – set aside
2. Sauté chopped onion and garlic in olive oil; add cauliflower to skillet once onion is cooked to desired texture. Cook on high heat in order to brown “rice”.
3. While cauliflower mixture is cooking, cook shrimp in olive oil in another skillet. Add any spices you like. I am partial to garlic powder, onion powder and paprika. Once cooked, set aside.
4. Scramble 3 eggs and chop as finely as possible.
5. Once cauliflower is browned to desired consistency and texture, add egg and shrimp to the skillet. Mix to combine.
