Ingredients:
- 1 head Purple cabbage (raw, shredded) - about 2 cups
- Carrots (raw, shredded) - 0.5 - 1 cups depending on your taste
- 1-2 T Red onion (raw, shredded) - this stuff is pretty potent when grated and can overwhelm the salad if you put too much so i only put like a tablespoon or two
- Juice of a lime or two (fresh limes, none of that bottled juice nonsense)
- A dash of olive oil
- Sliced tomatoes
- Sliced red peppers
Directions:
Shred/grate the first three ingredients, and mix together in a bowl. Squeeze the lime over and pour in the olive oil, and mix again. It should be kinda wet. Then just slice the tomatoes and red peppers and lay them on the top. Its pretty and it tastes good.
