Ingredients:
2 large acorn squash
4 large granny smith apples, peeled, cored and cut in 1/2" pieces
1 tablespoon fresh squeezed lemon juice
1/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 cup raisins
1/4 cup walnuts or pecans
Directions:
Cut squash in half and scoop out seeds.
Place halves on baking sheet face down in hot oven set at 375° F and bake for 20-30 minutes (for how-to-bake tips, check out this link).
Meanwhile mix apples, lemon juice, allspice cinnamon and raisins in a medium-sized bowl. Add the mixture to squash, and top with walnuts/pecans. Bake for an additional 30 minutes.
Let stand 5 minutes and then serve.
Since half an acorn squash is a lot for one person – especially if there are lots of other side dishes to choose from – try cutting these once baked into thirds or halves to make the portion sizes smaller. Don’t worry if the apple/raisin/nut mixture falls out – you can scoop that over the wedges as needed.
