Ingredients:
- 4 Chicken thighs
- 2 tbsp olive oil
- 1 shallot, minced
- 2 cloves garlic, crushed
- 4 tbsp balsamic vinegar or lemon juice
- 1 bunch collard greens, sliced and cleaned
- 1/2 c water
Directions:
In a sauce pan bring olive oil to medium heat and add chicken thighs, cook for about 10 minutes. In a separate pan, add 1/4 c water and the collard greens and bring to a simmer. Cook for 5 minutes, add shallot and garlic and cook for 5 more minutes, until the collard greens are soft but retain their form. Put the collard greens on a plate, top with chicken thighs and balsamic vinegar.
