This page is where you will find the growing collection of our favorite recipes.  All of these recipes have been either collected from or sent in to us from a variety of performance minded sources.  All of these recipes fit into our nutritional philosophy at BTB.  Some may be a bit more of a "treat" than others, but all use only whole food sources.  If you are adhering to a strict paleolithic style diet, be sure to read all ingredients to make sure the recipe fits into your plan. Most of them should.

Ingredients

  • 10 oz. of semisweet chocolate, roughly chopped (I actually use mostly bittersweet) 
  • 7 tablespoons of unsalted butter, cut into pieces
  • 5 large eggs, room temperature
  • 1 cup of sugar
  • 1/2 teaspoon of cinnamon (optional)
  • 3/4 teaspoon of chipotle chili powder
  • Dash of cayenne pepper (my dash is usally way more than a dash)
  • 1/2 tsp salt

1 Preheat the oven to 350°F.

2. Line the bottom of a 9 ½ inch springform pan with a circle of parchment paper. Grease the sides and the parchment with non-stick cooking spray.

3. In 30 second increments, melt the chocolate and butter together in a glass bowl in the microwave, stirring occasionally until smooth.

4. Whisk together the eggs and the sugar in a large bowl, and then slowly, a bit at a time, whisk in the melted chocolate. Add the salt and spices and taste, adjusting the spices if needed.

5 Pour into the springform pan and bake for 22-25 minutes or until a toothpick comes out clean. Let it cool completely on a wire rack
