ANNOUNCEMENT: FIELD TRIP #2: Julie & Charles are hosting a live, in-person cooking class Sunday, March 27th from 1-3pm at the Vine gym. This class was a huge hit the last time they did it! We all learned tons of tricks to make paleo so much yummier. Plus, this might be one of the last times you get to see Julie & Charles before they are all famous and stuff. Their Paleo cook book is coming out soon! We are all so proud. Come learn from the best! Space is limited, sign up in the side bar on the left. This class is free for BTB members. I never thought that learning a few cutting techniques could change my views on cooking, but boy has it ever. I spent much of my high school and college years working in a catering kitchen. I loved it! I learned all kinds of tricks. One thing I never got the hang of was proper cutting technique. After hanging around Julie a bit, I quickly learned I had to know which knife to use and how to wield it in order to remain her friend (JK!). Check out these YouTube videos for some quick instruction. Some of these tricks will save you tons of time. The onion video will save you loads of time. Chop one or two, store it and have it ready for the whole week. Tons of prep time saved!

Start by honing your knife each time you use it (honing is different than sharpening. Get your knives sharpened 1-2 times each year at the Cook's Warehouse. Less than $4 each blade. Worth every cent!).

Come play in the Vinings gym as we turn it into a kitchen! Well, sort of.
A few other notes for you:
- Cooks Warehouse offers some basic knife skills classes which are actually really good and relatively inexpensive. Gena Berry is a great instructor, and I know you'll learn useful stuff!
- The best knife? The knife that fits your hand best. We'll have Shun, Wustof, Henckels, and some others for you to mess around with at the cooking demo. If you don't already own a good knife, get one!
- Though knife skills are HUGELY important, there are some gadgets that really do work well, and are time saving. Especially if you don't like chopping things, or are nursing some finger injuries from chopping gone bad. I think Jeff (and Charles) are walking spokespeople for the Slap Chop. While it won't be gorgeous tourne cuts, it will get the job done!

Anyone know if the knife skills classes involve knife throwing?
Anna - if you go to the CF blog, you should see the Paleo cooking 101 I think.
Felkey - maybe you and Charles can start a knife throwing class. Though I'm pretty sure no one will volunteer to be your target.
I took Knife Skills 101 at Cooks Warehouse about 5 years ago and it was awesome! Definitely increased my efficiency in the kitchen. But sorry Felkey, no knife throwing.
