New Source for Omega 3 eggs.
The Cornicopia Institute came out with an Egg Scorecard earlier this month. Turns out The Country Hen, which I have recommended in the past, might have some sketchy practices. We can't tell for sure because they won't be open with their practices. Not completely sure what is up with all of this, it may be a consipiracy! Hopefully not. What we do know is that this company: Vital Farms is PRO sunlights, pasture pecking and some elbow room for "the girls" as they call their hens. The good news about Vital is that you can find them at many Whole Foods in Atl. Check out their Egg Location page here. So, for now, let's get these eggs and hold off on The Country Hen until we get a little clarity there.
If you guys have some insight on this, definitely dish in the comments below. I would love to get more clarity on The Country Hen so I can recommend them again!

Here's a great article as a follow up to this posting.

I especially agree with this part:
"“So how do I know, when I go to the supermarket, that I’m getting safe eggs?”
This was my response: Don’t buy them in the supermarket.
Get them from pastured operations at a farmers market, a local-foods retailer, or a buyers club. Get them from farms that raise more than one kind of animal, that allow you to visit and walk among their animals, that are pleasing both aesthetically and aromatically, and that are sensually romantic."
I found your post really interesting and it has really improved my knowledge on the matter.
Just made this from the Paleo Cookbooks:
Almond and Parsley Paste
Serves 6-8
1 bunch continental parsley
2 tbs lemon juice
3 tbs mayonnaise
1⁄2 cup sliced almonds
4 tbs olive oil
3 garlic cloves, roughly chopped
Stuff it all in a food processor, mix it up, and consume away!
So far I just added it to a bit of salmon and I can't wait to spread it on some bell peppers! Might just be my love of garlic though...
